Oreo Pancakes....yumm


     I have been having a super tough time getting back into my groove after being on holidays.  I know it's been a month, but you remember Newton's law from school "Objects in motion like to stay in motion.  Objects at rest like to stay at rest".  The latter law applies to me!  I really liked telling people what I wanted to eat, eating, then walking away, it was AWESOME.  I liked having fun all day, then coming back and magical fairies (o.k. I know it was a maid) had cleaned my room, made my bed, and cleaned my toilet, AWESOME.  Now when I tell people around here what I would like to eat, they stare at me all wide eyed and laugh "Oh Mommy you're so funny."  When I come home after a day of fun, my house looks like a dirty bomb went off (in other words the exact same as the way I left it).  
    This morning I decided to make my family pancakes.  Before our holidays (back when I had my groove on)  I did it all the time, but like I said "objects at rest like to stay at rest".  Everyone was pretty excited.  I thought I would like to make it extra special (Mother's Day is coming up you know gotta kiss up).  I looked in my cupboard and saw the mini- chocolate chips, tasty, but tricky to clean off of the grill.  Then my eye caught the cocoa, and magic was born.


    I had made my first batch of plain old boring pancakes, and then the magic.  Rowan came up with a genius idea next (o.k. "genius" might be stretching it).   "These pancakes look a little like oreo cookies".  YES, YES I thought.  I took some icing sugar and added just a little bit of water.  I then drizzled the icing onto the pancakes.  And that ladies and gentlemen is how you make gold.


Oreo Pancakes


1 1/2 cups all- purpose flour                                   1 Tbsp granulated sugar
1/ 2 tsp salt                                                               1 Tbsp baking powder
1 egg beaten (I never really do)                              2 Tbsp cocoa powder
1 1/2 cup milk                                                          2 Tbsp cooking oil 

Heat your griddle.

Combine flour, sugar, baking powder, cocoa and salt in medium sized bowl.  Add in the egg, cooking oil and milk.  I like to use my whisk.  You just want to moisten all the ingredients.  I use my 1/4 measuring cup to pour my batter onto the griddle.  When the bubbles appear, those little bad boys are ready to flip.

I then took a cup of icing sugar and added just enough water to make it into a syrup.

For my family of 6 I double this recipe.





Oreo Pancakes were a hit!
